Happy Fox Day!  We decided it would be fun to celebrate the release of BABYMETAL’s new album Metal Resistance with a Kitsune Cake!  Kitsune is Japanese for fox so we made an orange marmalade and white chocolate cake that looks like Su-Metal’s fox mask. Cake

  • 1 Cup Unsalted Butter, Softened
  • 2 Cups Sugar
  • 3 Eggs
  • 2 Tsp Vanilla Extract
  • 2¾ Cups Flour
  • 1 Tsp Baking Soda
  • ½ Tsp Baking Powder
  • ½ Tsp Salt
  • 2 Cups Sour Cream
  • 1/2 Cup Marmalade
  • 1 Tsp Orange Extract

 

Buttercream:

  • 2 Sticks of Butter, Softened
  • 1/2 Cup White Chocolate Chips
  • 1 Tsp Vanilla Extract
  • 3 Cups Confectioner’s Sugar
  • Pinch of Salt
  • 2-3 Tbsp Milk
 
  1. Preheat oven to 350. Grease a 11 x 17 glass baking pan. In a large mixing bowl cream together butter and sugar with an electric mixer until fluffy. Mix in eggs one at a time. Add vanilla, marmalade, orange extract and sour cream and mix until blended.
  2. In a separate medium sized mixing bowl, combine flour, baking soda, baking powder and salt. Add dry mixture to the wet in small batches until completely combined. Spoon into baking dish, making sure it’s evenly dispersed.
  3. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool on a wire rack.
  4. Topping:
  5. Melt white chocolate on a double boiler or in microwave. Cream together butter and vanilla. Add melted chocolate and cream. Add powdered sugar in small batches, combining fully each time. Add milk one tablespoon at a time until consistency is reached.

  Decoration:
  Gel food coloring
  Paint Brushes
  Paper outline of mask
  Toothpicks
  White Fondant
Assembly:
  1. Make a paper outline of the mask and use it to trace the shape onto the cake. I made a 2 layer cake, so make sure to leave enough room for each layer you want to cut out. Attach ears to cake with toothpicks if you carve those out separately.
  2. Spread a layer of frosting between the cake layers, then frost the entire surface of the cake.
  3. Roll out fondant and spread onto cake. Mold to the shape of the cake and trim off any excess.
  4. Using food coloring gels to paint on the design (I watered some of them down to achieve the color and consistency that I wanted).
  5. Let dry, then enjoy!
